"Daijirin -大辞林”、one of the most reputable Japanese language dictionanries published by Sanseido Inc. has a heading of '畳の上で死ぬ -to die on a tatami mat' and defines it as "事故などで不慮の死を遂げるのではなくて、家で穏やかに死ぬ” meaning 'to die peacefully at home, not dying 'unwillingly' out of home (by accident, fight, natural desasters, and so on).' as I wrote in my question. Use of tatami for Taekwondo is just incidental. It's being used for the floor of tea ceremony, flower arrangement, and zen meditation, all very peaceful exercises.
